How to Choose an Industrial Meat Processing Oven
Chamber size is only one part of choosing an industrial oven. Products, processing requirements and trolley movement should be considered within the same production plan.

Describe the required processes clearly
Make your requirements more specific than simply requesting a meat processing oven. Identify the operations you expect, such as steam cooking, hot-air cooking, drying or scalding. Sharing the product range, presentation and existing production flow helps define the equipment more accurately.
The FERMAK oven range offers different trolley capacities and control features for these applications. Review the processes included in your selected model, any auxiliary equipment and required facility connections as separate quotation items. A feature offered within a product family is not necessarily included in every configuration.
Translate trolley capacity into a loading plan
Do not assess capacity only by the number of trolleys entering the oven. Provide trolley dimensions, shelf or smoke-stick arrangements and the way products are carried. A setup using ham moulds and one carrying suspended products should not be treated as identical loading plans.
Include preparation, loading, processing, unloading and transfer to the next stage as separate activities in your production schedule. This helps establish the space needed for waiting trolleys and the handling equipment that will be in use at the same time. Plan batch size alongside the other stages of the line.
Review the controls against your workflow
Ask which parameters can be adjusted, which information can be monitored and how programmes are stored, where available. Working through an example recipe change is often more informative than reading a feature list alone.
State your quality team's monitoring and record-keeping needs during the quotation stage. Define measurement points, sensors, recording options and any required connection to existing systems as individual requirements. Processing programmes should follow product-specific production procedures that your business has validated.
Plan installation and supporting equipment together
Add clearance for door movement, trolley manoeuvring and service access to the layout drawing. Confirm which electricity, steam, water, drainage and ventilation connections the selected configuration requires. Preparing the existing facility should form part of the purchase plan.
When choosing oven trolleys, review dimensional compatibility, shelf arrangement and parking space outside production. FERMAK H-type and Z-type oven trolleys can be considered alongside these layout requirements.
Prepare for the quotation discussion
- List product types and required process stages.
- Share trolley dimensions and the intended loading arrangement.
- Prepare your batch schedule and facility layout.
- Specify control, record-keeping and utility requirements.
